This well-loved soup relies on roasted butternut squash, plus aromatics like ginger, garlic, makrut lime and lemongrass for its signature flavor. Silky smooth, and fabulous with anything coconut. Despite the red chili in the ingredient list, this soup is not at all spicy. Last batch until the fall.
