Chimichurri

Originally from Argentina, and now common throughout South America, chimichurri is a condiment used both in the kitchen and at the table. Our not-at-all-traditional version skips the garlic and oregano, and instead uses cilantro, parsley and scallion for the herby base, with cumin and paprika for depth and fresh lemon juice for its tart note. Honey adds a little sweetness and refined olive oil keeps the flavor un-muddied and helps preserve the paste. Everything is coarsely blended together. This chimichurri is fabulous as a marinade for vegetables or proteins and brushed on grilled bread or as part of a sandwich. Over time, the color will mute, but the flavor will deepen.
